Spicy Buffalo Cauliflower Bites

Ingredients

  • 1 head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 cup buffalo sauce
  • 2 tablespoons olive oil
  • Celery sticks, for serving
  • Ranch or blue cheese dressing, for dipping

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, water, garlic powder, onion powder, paprika, and salt until smooth. Dip each cauliflower floret into the batter, shaking off excess.
  3. Arrange the battered cauliflower on the prepared baking sheet and bake for about 20 minutes, or until golden and crispy.
  4. While the cauliflower is baking, mix the buffalo sauce with olive oil in a small bowl.
  5. Once the cauliflower is done, remove it from the oven and toss in the buffalo sauce mixture until fully coated. Return to the oven for an additional 10 minutes.
  6. Let cool slightly before serving alongside celery sticks and your favorite dressing.
