Mini Quesadillas With A Variety Of Fillings

Mini quesadillas are an awesome addition to any Memorial Day party. They’re easy to whip up and can be filled with many different ingredients. Crispy on the outside and gooey on the inside, these little bites are sure to be a hit at your cookout.
Ingredients
- 4 flour tortillas
- 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
- 1 cup cooked chicken, shredded or diced
- 1/2 cup bell peppers, diced
- 1/2 cup onions, diced
- 1/4 cup black beans, drained and rinsed
- 1/4 teaspoon cumin
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add onions and bell peppers, and cook until softened, about 3-4 minutes.
- Add shredded chicken, black beans, cumin, salt, and pepper. Stir until well combined and heated through.
- In another skillet, place a tortilla and sprinkle half with cheese. Add a spoonful of the chicken mixture, then top with more cheese and fold the tortilla over.
- Cook for about 2-3 minutes on each side until golden brown and cheese has melted. Remove from skillet and repeat with remaining tortillas.
- Slice into wedges, garnish with cilantro, and serve with salsa, guacamole, or your favorite dips for a tasty appetizer!
