Grilled Vegetable Platter With Hummus

Grilled vegetable platters make a fantastic appetizer for any Memorial Day gathering. They are colorful and bursting with flavor, making them a hit. Perfect combination of smoky grilled veggies and hummus.
Ingredients
- 2 zucchini, sliced
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 small eggplant, sliced
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 cup hummus
- Fresh basil leaves for garnish
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, toss the zucchini, bell peppers, eggplant, and cherry tomatoes with olive oil, salt, pepper, garlic powder, and oregano until well coated.
- Place the vegetables directly on the grill or in a grill basket. Grill for about 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.
- Remove the vegetables from the grill and let them cool slightly.
- Arrange the grilled vegetables on a serving platter and serve with hummus in the center. Garnish with fresh basil leaves.
