Berry Cheesecake Bars

These Berry Cheesecake Bars are a perfect summer treat, especially for the Fourth of July! They combine a creamy cheesecake filling with a delightful crumb crust and fresh berries, making them both refreshing and satisfying. Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- 3 large eggs
- 1 cup mixed berries (raspberries and blueberries)
- ½ cup berry sauce or jam for topping
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9×13-inch baking dish.
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well and press the mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, beat the cream cheese with an electric mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until combined.
- Add the eggs, one at a time, beating well after each addition. Fold in the mixed berries gently.
- Pour the cheesecake mixture over the crust and smooth the top with a spatula. Bake for 25-30 minutes, or until the center is set.
- Let it cool completely, then refrigerate for at least 4 hours. Before serving, drizzle with berry sauce and additional berries on top.
