Ingredients

  • 2 cups cooked rice white or brown
  • 1 pound boneless skinless chicken breasts
  • 1 cup corn fresh, frozen, or canned
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/4 cup fresh cilantro chopped
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  • Marinate the Chicken: In a bowl, combine olive oil, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breasts with the marinade and let it sit for at least 30 minutes.
  • Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Let it rest before slicing.
  • Prepare the Corn: If using fresh corn, grill it until slightly charred. If using frozen or canned corn, simply heat it through. Mix the corn with mayonnaise, cilantro, and feta cheese in a bowl.
  • Assemble the Bowls: In each serving bowl, add a generous scoop of rice, sliced grilled chicken, and the corn mixture on top. Drizzle with extra lime juice if desired.
