Slice bacon into 1 inch pieces
Heat small (8-9 inches) skillet over medium heat. We like to use our cast iron skillet so be sure that your skillet is oven/broiler capable.
Cook the bacon pieces until crisp, about 5-10 minutes. Remove bacon from the skillet and place on a paper towel to drain grease.
Remove bacon grease from the skillet leaving about 1-2 Tablespoons in the skillet.
Add the garlic to the hot pan and cook for about 1-2 minutes.
Add the chicken stock, cream cheese, red pepper flakes and the black pepper to the skillet and bring to a boil.
Remove the skillet from heat.
In a bowl, mix together the Monterey jack cheese and corn starch. Coat the cheese evenly. Add the cheese to the skillet and stir until the cheese is smooth and creamy.
Place skillet into the broiler and broil until the top is golden brown and bubbly.
Garnish with the cooked bacon and fresh sliced green onions.
