Bacon Queso Recipe

Skillet Bacon Queso combines crispy bacon, fresh garlic, and loads of real, melty cheese in a delicious dip that's perfect with chips!

Ingredients

  • 2 cups Monterey jack cheese shredded
  • 4 oz cream cheese softened
  • 1 tbsp garlic minced
  • 1/4 cup chicken stock
  • 2 tsp crushed red pepper flakes
  • 1/2 tsp black pepper
  • 1 tbsp corn starch
  • 1/4 pound bacon
  • 2 tbsp green onion tops sliced

Instructions

  • Slice bacon into 1 inch pieces
  • Heat small (8-9 inches) skillet over medium heat. We like to use our cast iron skillet so be sure that your skillet is oven/broiler capable.
  • Cook the bacon pieces until crisp, about 5-10 minutes. Remove  bacon from the skillet and place on a  paper towel to drain grease. 
  • Remove bacon grease from the skillet leaving about 1-2 Tablespoons in the skillet.
  • Add the garlic to the hot pan and cook for about 1-2 minutes. 
  • Add the chicken stock, cream cheese, red pepper flakes and the black pepper to the skillet and bring to a boil. 
  • Remove the skillet from heat.
  • In a bowl, mix together the Monterey jack cheese and corn starch. Coat the cheese evenly. Add the cheese to the skillet and stir until the cheese is smooth and creamy.
  • Place skillet into the broiler and broil until the top is golden brown and bubbly.
  •  Garnish with the cooked bacon and fresh sliced green onions.
