Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries, and blackberries)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon cinnamon
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the mixed berries, sugar, lemon juice, cornstarch, and vanilla extract. Mix well and set aside to let the berries release their juices.
  3. In another bowl, mix the flour, baking powder, salt, and cinnamon. Pour in the melted butter and milk, stirring until just combined.
  4. Spread the berry mixture evenly in a greased baking dish. Spoon the batter over the berries, making sure to cover as much as possible.
  5. Bake for 25-30 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  6. Allow to cool slightly, then serve warm with a scoop of vanilla ice cream on top. Enjoy your patriotic treat!
