Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, sliced
- 1 cup fresh blueberries
- 2 tablespoons strawberry jam
- Mint leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C). In a large bowl, mix flour, sugar, baking powder, and salt.
- Add chilled butter and mix until the mixture resembles coarse crumbs. Stir in heavy cream and vanilla until the dough comes together.
- Turn the dough onto a floured surface and gently knead a few times. Roll out to about 1 inch thick and cut into rounds.
- Place the rounds on a baking sheet and bake for 15-20 minutes until golden brown. Let cool.
- Once the cakes are cooled, slice them in half. Spread a layer of strawberry jam on the bottom half, add sliced strawberries, and blueberries, then top with whipped cream. Replace the top half and repeat with the remaining cakes.
- Garnish with extra berries and mint leaves before serving.
