Sweet corn..oh yes. We picked up some yesterday at the farmers market and it is the best! Then you have mac & cheese – my kids are in heaven. And then some bacon…HELLO! Plus I love that it is a skillet meal and thus not a lot of pots and pans. Just one for the pasta and one for the meal itself!

Take advantage of the seasons sweet corn now before it is gone. Grocery stores, farmers markets and roadside stands should be selling it and at a decent price. Our price point where I live is 25¢ per ear or less. If you are lucky enough to have it growing in your garden even better. Watch for sales and coupons for your bacon, pasta and cheese. One of our stores here puts their thick cut bacon on sale for $1.90 Lb. and we buy 20 lbs. at a time and freeze it. Yes that is a lot of bacon. But when regular price of bacon is $3-$5 a lb. We take the savings where we can! I have a couple of ripe cherry tomatoes – maybe 5 or 6 on my tomato plants out back so I am going to use those too (free food!)
- 1/2 lb gemelli or other short-cut pasta
- 4 strips bacon, chopped
- 2 ears sweet corn, kernels cut off cob (2 cups)
- salt and pepper
- 2 Tablespoons butter
- 2 Tablespoons flour
- 1 cup milk (I used skim)
- 1 cup chicken broth
- 2 cups shredded cheddar cheese
- 1 vine-ripened tomato, chopped (about 1 cup)
