Rice-a-Roni can often be bought at a good price when you combine a sale & coupon and I have quite a few boxes in my stockpile right now. I like to have it on hand as a quick side dish. Of course you can opt to make your own too (see our recipe forhere). But I also like to discover new ways to use this handy dandy side dish. So when I spotted this recipe I knew it was going to go on my meal plan.
So what’s for dinner tonight?
This is a super frugal recipe with no exotic ingredients on the list. Beef flavored Rice-a-Roni, hamburger, mushrooms and some basic spices & seasonings. And I don’t know about you but meatballs are always a kid friendly option in our house. Something about bite size makes them fun to eat for my kiddos!
On the side you can serve with some yummy mashed potatoes, some green beans and you have dinner on the table!
- 3/4 pound ground beef
- 1/3 cup onion, minced
- 3 cloves garlic, minced
- 1 cup fresh white mushrooms, diced into small pieces
- 1- 6.8 ounce box beef rice a roni
- 1 egg
- 1 1/2 teaspoon dried parsley
- 2 cups warm water
- salt and pepper, as desired
