Freezer Meals Whole Wheat Buttermilk Pancakes



Whole Wheat Buttermilk Pancakes

3/4 c whole wheat flour
3/4 c all-purpose flour
3 TBS sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 1/2 c buttermilk
1 tsp vanilla extract
1 TBS butter, melted
1 large egg
1 large egg white

Combine dry ingredients in a mixing bowl and whisk together. In a separate bowl combine the wet ingredients and whisk those together. Add the wet ingredients to the dry ingredients and stir until just combined.

Heat pan and grease lightly with butter. Pour on batter to make desired size pancake. Wait for bubbles to form, flip.

Makes approximately 12 large(5-6 inch diameter) pancakes.

I made my batter in a blender and I will NEVER whisk pancake batter again, way easier. I also used 4 small eggs instead of the 1 large and 1 egg white(we get farm eggs and I can currently get the small Pullet eggs for $2 a dozen, using those up to make these).

I made 5 batches of these today for our freezer, and the kids ate some for lunch, they are delicious.
