You can add it to shredded mozzarella and use it in between layers when making eggplant parm. It is also good for eggplant rolatini. Manicotti is another use for ricotta. You can make your own crepes and stuff them with a ricotta and egg mixture or but the shells and stuff them.
I also believer there is a recipe for cheesecake that uses ricotta. check it out online. Good luck!
