Recipes - Tried & True "The Sauce" for chicken & pork ;)

OK. You can't tell my husband I told ya. Shhhh.....
No lie, he made me write it down, in case he died. I swear! :hysterical:
It is SO GOOD!!! :BigHand:

This is the recipe for a crowd, husband did 15 lbs of chicken breasts with it last weekend.
Can be halved or doubled easily.
(The measurements are my husbands...uhh...he measure like a man :giggle2:)

1/2 gallon of apple cider vinegar
1 stick of butter
3 large lemons (cut in 1/2, squeezed into the pot and then thrown right into the pot)
rounded TBSP of minced garlic
1/8 c sugar
3 or 4 shakes of hot sauce
salt, garlic powder & Italian seasoning (we'll get to how much in a minute :giggle1:)


In a large pot, add the 1st 6 ingredients turn on med to med high heat.
Cover the top of the liquid, with garlic powder (it will float) stir it in and do the same with the Italian seasoning.
Add up to a 1/4 box of salt :hectic:

This is the key...as you are adding the salt...you need to taste it....
You should taste lemon over vinegar and salt over lemon!
Heat to JUST before boiling, DO NOT BOIL!

At this point, we separate the sauce into 2 pans.
One is for soaking the raw chicken or ribs, for a few minutes before you put it on the grill.
The second, is for brushing on the meat, just before you take it off. YUM!

I KNOW, right?!?
But it's SO GOOD, it does amazing things to the meat!
(It's really for ribs, we just happen to like it on chicken, too!)
It should be served with ample beverages. :poke:

My uncle makes a similar sauce except he puts like a zillion sticks of butter in it. But it is good!!!

I think I'll try this on the ribs I'm going to do when the kids come home in July. [MENTION=353456]Green is Gold[/MENTION] Have you ever marinated the meat overnight in THE SAUCE?

We never have, it seems like they might get too salty? :dontknow1:
He usually throws them in while he's getting the coals and stuff ready.
They're usually in maybe an hour before they hit the grill.
For the ribs, he usually tries to keep them wet while they're cooking.
You could brush them or put the sauce in a spray bottle and spray them periodically.
The chicken cooks much faster and doesn't need as much attention.
