Recipes - Tried & True The Best Caramel Corn EVER!

I posted this in cookies and candies...because there's not a section for snacks. I hope everyone who finds it, enjoys it as much as my family does. My mom made it for us when I was growing up, and I've been making it since then.

The MOST important thing to remember when making this is.....DO NOT LICK THE SPOON when you're stirring the caramel sauce!!! It WILL burn you!!!!! (the voice of experience)

Caramel Corn

3 T. cooking oil
1/2 cup yellow popcorn
1/2 cup butter
1 cup firmly packed light brown sugar
1/4 cup light corn syrup (Karo)
1/2 tsp salt
1/2 tsp. vanilla
1/4 tsp. baking soda

Preheat oven to 250.
1. Pop popcorn in oil. Set aside in a large bowl in oven to keep warm.
2. Melt butter in saucepan. Stir in sugar, syrup and salt. Bring to a boil and cook for 5 minutes, stirring constantly. Remove from heat and stir in vanilla and baking soda. Pour over warm popcorn, mixing well.
3. Separate pieces of popcorn and place on 2 large baking sheets. Bake for 1 hour. Cool completely. Store in airtight container.

**Note: I made 2 batches of this for Christmas, and it went FAST!!!!
