Vegetarian/Vegan Sweet Potato (or Butternut Squash) Minestrone

Originally printed in the New Orleans' Times Picayune (Newspaper). I typically make it with butternut squash since DH isn't a huge sweet potato fan.

Sweet Potato Minestrone

1c chopped onions
1c chopped carrots
½ c chopped celery
2 14oz cans vegetable broth or vegetable bouillon
1c water
2c peeled diced sweet potatoes (or butternut squash or acorn squash)
1 tsp dried oregano
½ tsp dried basil
salt or pepper to taste
1 28 oz can diced tomatoes, undrained
1 15oz can Great Northern beans or cannellini beans or garbanzo beans, rinsed and drained
1 10 oz bag fresh spinach, stemmed and coarsely chopped or 1 box frozen chopped spinach defrosted and drained

In a large pot coated with non-stick spray (or olive oil), sauté onion, carrots, and celery until tender. Add vegetable broth, water, sweet potatoes (or winter squash), oregano, basil, salt and pepper, tomatoes with juice, and beans. Bring to a boil; cover, reduce heat and simmer for 30 minutes, or until vegetables are tender. Stir in spinach and cook just until wilted. Makes 8 servings.

I serve with Parmesan cheese and red pepper flakes.
