Sweet Potato Dessert Squares



I have over 25 lbs of FREE Sweet Potatoes (with more to come!) from Food Lion, so I'll use this thread to share the recipes I'm planning to make. Then, I'll come back and post what kind of reviews they get!!! I know some of these are dessert and bread recipes, but since Sweet Potatos are veggies, I figured this was the right place for the thread!!!

In the oven right now (from an old Taste of Home):

Sweet Potato Dessert Squares (*** I'd give these about a 6/10... they were good but not absolutely fabulous***)

1 pkg yellow cake mix, divided
1/2 c margarine or butter, melted
1 egg, beaten

3 c mashed sweet potatos
2/3 c milk
1/2 c packed brown sugar
2 beaten eggs
1 Tbl pumpkin pie spice (I used 2 tsp of strong cinnamon, 1/4 tsp each of nutmeg and cloves)

6 Tbl butter or marg
1c chopped pecans
1/4 c sugar
1 tsp ground cinnamon

Set aside 1c cake mix. Combine remainder with butter and egg; spread into greased 13x9 pan. Whisk filling ingredients until smooth and pour over crust. For topping, cut butter into reserved cake mix until crumbly. Add pecans, sugar, and cinnamon. Sprinkle over filling. Bake 350 for 60-65 min. Cool.
