Sweet Potato Casserole

1 29 oz can sweet potatoes, drained
1 tsp each Cinnamon & Nutmeg
1/4 tsp salt
3 tbsp softened light cream cheese
2 tbsp brown sugar
1 tbsp softened butter or margarine
1/3 C crushed pineapples, drained
3 tbsp chopped pecans or walnuts, optional

Preheat Oven to 325*F

Combine sweet potatoes, salt and spices in a mixing bowl. Beat mixture at medium speed 2 min or until smooth with an electric mixture. Add sugar, butter and cream cheese to mixture and beat at med speed until combined.
Stir in pineapples.
Grease a 9-inch round glass baking dish and spoon in mixture. Bake for 30 min, then add pecans and bake for an additional 15 minutes.

We do this every Thanksgiving except without the pineapples. It's a hit every time!

Oh, I just reread the recipe -- I've always used fresh sweet potatoes. Are the canned ones called yams?

LOL! Yeah, the canned ones are yams. We use fresh sweet potatoes too, but this is quick if you don't have time to precook them.
