I made this the other night for dinner. It was quite tasty with Hot Turkey Link Sausage. We sprinkled with Parmesan cheese and red pepper flakes. I also added thinly sliced carrots for a little for color. So good!

Ingredients
1 pound bulk Italian sausage
4 cans (14-1/2 ounces each) chicken broth
8 small red potatoes, quartered and thinly sliced
1 envelope Italian salad dressing mix
2 cups fresh spinach or frozen chopped spinach

Directions
In a large skillet, brown sausage over medium heat until no longer pink. Meanwhile, in a Dutch oven, combine the broth, potatoes and salad dressing mix. Bring to a boil; cover and simmer for 10 minutes or until potatoes are tender.
Drain sausage. Add sausage and spinach to broth mixture; heat through.

Yield: 10 servings (2-1/2 quarts).

Making the 3rd pot right now since I posted this! The kids love it as well when I don't use hot sausage.

Could you freeze this as well?
Sorry for the ridiculously late reply, but yes, you can freeze!

I cooked a pot last night with a friend's gift of fresh DELICIOUS sausage. I froze 2 containers!
queenofthehivemomof5 - this would be a good crock-pot recipe as well (after browning sausage)!
