Spicy Pomegranate Chicken & Rice

Take a 64oz bottle of pomegranate juice or cranberry pomegranate juice. Old Orchard brand works the best, Ocean Spray is fine too, avoid off brands. Dump about 2/3 of the bottle in a saucepan, add a few grinds of black pepper, a pinch of salt, a pinch of ground coriander, and about a teaspoon of red pepper flakes.

Set over medium high heat and bring to a rolling boil. Let it boil for 30-60 minutes until it's reduced down to the consistency of honey.

While the sauce is reducing, cut 3-4lbs of chicken breast into bite sized pieces. Season with salt, pepper & a little garlic and saute in butter & olive oil until cooked through and nicely browned.

(optional) Heat a 10-12oz package frozen snow peas in the microwave, drain, and add them to the chicken, cooking briefly.

Keep the chicken warm while the sauce finishes.

Once the sauce is reduced, (carefully!) taste for seasoning. Add more red pepper flakes to your spice tolerance. The sauce should be the consistency of honey, and be sweet, tangy & spicy all at once.

Put chicken in a serving dish, pour sauce on top, and serve with rice!
