I got this recipe from my sister. It's easy...healthy...and yummy!

Spiced Red Lentil Stew with Spinach & Lemon

2 T. olive oil
4 garlic cloves, minced
1/4 tsp red pepper flakes (adjust to taste)
2 tsp. ground cumin
1 tsp. ground coriander
1 tsp. curry powder
1 cup dry red lentils
1 can diced tomatoes (14.5 - 15 oz)
4 cups chicken or vegetable stock
salt & pepper
8 oz. fresh spinach, stems trimmed
Lemon wedges, for serving

Heat oil in large saucepan over medium heat.
Add garlic, pepper flakes and spices.
Stir until garlic is light brown...about 1 minute.
Add lentils, tomatoes and stock.
Bring to just a boil...reduce heat.
Cover and simmer, stirring occasionally, until lentils turn to puree, about 20 minutes
Season with salt & pepper.
After washing and trimming the spinach, steam it for a few minutes.
Serve the stew with the steamed spinach on top.
Pass lemon wedges for squeezing over the stew.

*The first time I made this, I didn't have spinach. It was wonderful without, if you don't have any spinach on hand. Also, I didn't squeeze lemons over it. I included it in the recipe, since my sister eats it that way, and shared the recipe with me.

**Red lentils are a MUST for this! The regular lentils do not break down like the red ones do, and it doesn't come out right.
