Tonight is the first time I've put this recipe cooking in the crockpot. I've never cooked roast this way before. Fingers crossed it comes out good.

Smoky Beef Roast
2 pounds beef round roast
8 ounces mushrooms sliced (I didn't have mushrooms, so I omited this ingredient)
1/2 cup onion (I used a whole onion-I like onions)
1/2 tsp garlic (I probably used about a tablespoon-I like garlic)
1 1/2 cups coffee
1 tsp liquid smoke
1/2 tsp chili powder
1/2 tsp black pepper (I used red pepper instead-I prefer red pepper)
Place roast in slow cooker. Combine remaining ingredients and pour over roast. Cover and cook on low for 9 to 10 hours.

It was good, but I think it needs a thicker gravy. I think next time I'm going to combine this idea with how I normally make my roast.

This is how I normally make my brown gravy, but I usually leave out the coffee crystals and I sub the water and boullion for home made broth.
1 2/3 c Cornstarch
6 T Low Sodium Beef Bouillon
4 t Instant Coffee Crystals
2 t Onion Powder
1 t Garlic Powder
1/2 t Black Pepper
1/2 t Paprika

Combine all ingredients and store in an airtight container. To make gravy, measure 3 tablespoons mix into a saucepan. Add 1 1/2 cups water. Bring to a boil and simmer 1 minute.

I think next time, I will use half coffee and half broth and add the liquid smoke to it too and see how that comes out.
