Research about safe food handling

I need a some of tips from a canteen concessionaire. I'm making a study about safe food handling. I know its a bit difficult especially if you have a captive market. I want to be aware about their food handling practices. How do they educate food handlers? Would you any that can help manage food handling to reduce cross contamination risks? Any related information will help me with my research ?

it's called ServSafe -- and it's put out (including certification) by the NRA (National Restaurant Association). I have a ServSafe Management Certificate.
