Pumpkin Soup with Lentils Pumpkin Soup with Lentils

Ingredients
1​
1 small sweet onion, cut into wedges (I chopped)

1​
1 yellow sweet peppe, seeded and sliced

1/2​
1/2 cup yellow lentils or lentils, rinsed and well drained

1​
1 tablespoon olive oil

2​
2 teaspoons grated fresh ginger

1​
1 teaspoon curry powder

1​
1 teaspoon ground cumin

1​
26 ounce box chicken stock

1​
15 ounce can pumpkin

Salt and ground black pepper

Freshly grated nutmeg (optional)

Snipped fresh flat-leaf Italian parsley (optional)



Directions
  1. In a 4- to 5- quart Dutch Oven, cook onion, sweet pepper, and lentils in hot oil over medium-high heat for 2 minutes. Whisk in ginger, curry powder, cumin, stock, and pumpkin puree. Bring to boiling; reduce heat to medium-low. Simmer, covered, for 25 minutes or until lentils are tender, stirring occasionally. Season to taste with salt and pepper.
  2. To serve, ladle into bowls and sprinkle with grated nutmeg and flat leaf parsley.

Glad you posted the recipe, because BHG and is causing problems again demanding I register to view it online. :sad3:
I'm actually already registered, just can't remember my password. Had to discontinue their e-mails because they were flooding my box with everything that didn't interest me. Sounded good when I first subscribed...:rolleyes24:

I've been wanting to try a pumpkin or squash type soup, this looks good. And maybe if I cut it in half I can try it and not feel bad if it's just not my cup of tea. Although I could freeze, bet my oldest son would like it. Youngest would ask where's the meat.

So, Apparently, I am out of curry powder and I realized after I added the ginger. Hmmph! So, I subbed chili powder for the curry and added juice of 1/2 a lemon for double the recipe (thanks to the big cans of pumpkin I acquired!).

It works this way, too. But, I had to double the amount of chili powder!
