So there are several produce deals at Aldi this week. Potatoes for $1.49 for 10 lb, Sweet potatoes for 33 cents a lb,, asparagus (forget the price off hand), and carrots for 49 cents. Considering canning up some potatoes, sweet potatoes and carrots and maybe freezing some asparagus. I know regular potatoes can be tricky to can, any tips? I may mash and dehydrate the sweet potatoes as I like to "hide" them in sauces etc. Questions: about how many regular potatoes does it take to fill a pint jar? Anyone ever tried to do a glazed type carrot recipe in a canner? Thanks.
