Recipes - Healthy Oat Bread/rolls

1 1/2 cup oatmeal seperated
1 1/2 C warm water 110 degrees
1 packet rapid rise yeast
3T honey
2T butter/margarine melted
1t salt
2.5-3.5C flour

Take 1 cup of oatmeal and put it in a food processor, blend until flour like.
Mix water, yeast in bowl till dissolved , add honey, salt and butter. Mix in oats, oat flour and AP flour. I use a kitchen Aid mixer, I add enough flour so it just barely sticks to the bottom of my mixing bowl- knead until smooth-I just let it got for a while until the the sides of the bowl are clean and then for a few more minutes.

Flip out on board put bowl on top let rest 10 minutes. Shape into rolls let rise for 30 minutes OR Until double in size-it all depends on how warm your proofing spot is and how warm your dough is when you start- cook at 350 for 16 minutes. Also makes one loaf of bread cook for 30-35 minutes.

When I am proofing my rolls (letting them rise) I usually turn my oven light on and turn the oven on 200 for about 3 minutes. Then I turn on my tea kettle get that water boiling and put that in the oven when I put my rolls in to rise. This way you don't have to worry about covering them with plastic wrap since they are in a warm MOIST spot the tops will not dry out.
