Monterey Bake



Monterey Bake

3 cups cooked rice
½ cup sour cream
½ cup milk
½ tsp salt
1 can (4 oz) green chilies, chopped
1 cup grated Monterey jack cheese
Parmesan cheese (1/8 – ¼ cup)

Combine rice, sour cream, milk, salt, green chilies, and ½ cup jack cheese. Mix well. Spoon into a buttered 1 ½ quart casserole. Top with remaining Monterey jack cheese. Sprinkle with paprika. Bake at 350-degrees for 25 – 30 minutes. During last 5 minutes, remove from oven, sprinkle with parmesan cheese. Finish baking for 5 minutes.

Note: If using low fat cheese or not fat sour cream, add alittle extra nonfat sour cream to improve moisture.
