Meat Loaf

1 ½ pounds lean ground beef
1 cup tomato sauce
¾ cup Quaker oats, quick or old fashioned, uncooked
1 egg
1 can chopped tomatoes, (14 ounce), well drained
¼ cup chopped onion
½ tsp salt
¼ tsp black pepper

1 Tbsp light brown sugar
1 Tbsp cider vinegar
1 Tbsp prepared mustard
¼ cup tomato sauce
¼ cup ketchup

Heat oven to 350-degrees. Combine beef, sauce, oats, egg, tomatoes, onion, ½ tsp salt, and ¼ tsp pepper. Mix lightly but thoroughly. Shape into tight loaf in a 11 x 8 or 10 x 6 glass pan.

Mix brown sugar with remaining ingredients. Pour over top of meat loaf.

Bake one hour, or until meat is no longer pink. Drain; let stand 5 minutes before slicing.
