Low Sodium Orange Chicken Recipe

2 oranges, cut into wedges, 1 bell pepper, chopped, 2 chicken breasts, 1 cup orange juice, 1/2 cup chili sauce, 2 tablespoons soy sauce, 1 tablespoon molasses, 1 teaspoon dry mustard, 1 teaspoon minced garlic, 1/4 teaspoon black pepper (I used red pepper)

Place the oranges and bell pepper at the bottom of the crock pot. and top with chicken. Combine the juice, chili sauce, soy sauce, molasses, mustard powder, garlic, and black pepper in a bowl. Pour over chicken and cook in crockpot overnight on low. Serve over rice.

This is how you make the chili sauce:
1 cn No Salt Added Tomatoes
1 cn No Salt Added Tomato Sauce
1/2 c Onion,Chopped
1/2 c Sugar
1/2 c Celery,Chopped
1.2 c Green Pepper,Chopped
1 T Lemon Juice
1 T Brown Sugar
1 T Molasses
1/4 t Hot Pepper Sauce
1/8 t Cloves
1/8 t Cinnamon
1/8 t Black Pepper
1/8 t Basil
1/8 t Tarragon
1/2 c Cider Vinegar


Combine all ingredients in a large saucepan. Bring to boil, reduce heat and simmer uncovered 1 1/2 hours or until mixture is reduced to 1/2 original volume.

This is how you make the soy sauce:

2 T Sodium Free Beef Bouillon
2 t Red Wine Vinegar
1 t Molasses
1/8 t Ground Ginger
ds Black Pepper
ds Garlic Powder
3/4 c Water


In small sauce pan, combine and boil gently uncovered about 5 minutes or til mixture is reduced to 1/2 cup. Store in refrigerator. Stir before using.

I use home made broth in place of the bouillon and water.
