Last night we had chicken cutlets, roasted eggplant, mini corn on the cobs, salad and I reheated leftover veggies and rice from the other night. Over the weekend, I attended a small graduation party for my niece / goddaughter. We enjoyed veal and asparagus, two types of rice balls, chicken bruschetta, stuffed mushrooms, penne ala vodka and eggplant parm. It was all so delicious! My niece works at this Italian deli and they did a wonderful job catering all this food.
