    Last night we had chicken cutlets, roasted eggplant, mini corn on the cobs, salad and I reheated leftover veggies and rice from the other night.

    Over the weekend, I attended a small graduation party for my niece / goddaughter. We enjoyed veal and asparagus, two types of rice balls, chicken bruschetta, stuffed mushrooms, penne ala vodka and eggplant parm. It was all so delicious! My niece works at this Italian deli and they did a wonderful job catering all this food.

    We were going to the farmers market late this afternoon, so this morning we cooked up a boxed mix with brown Basmati rice and lentils with some fresh veggies and then added some of the beef and caramelized onions from the weekend to make stuffed sweet peppers -- using peppers we got at the market last week.

    Stuck them in the Crock-Pot to steam this afternoon so that we didn't have to heat up the oven.

    Cottage cheese was cheap the past couple weeks, so it will be our side and we'll have yogurt for dessert.

    Tonight we'll have chicken thighs, roasted red skin potatoes with black pepper and fresh corn on the cob.

    Last night was frozen pizza.

    Tonight we tried the new Gardein Ultimate Plant Based Burgers since we got a sale and coupon. They weren't bad.

    We had them on whole wheat buns with cheese and tomato.

    Oven fries made from fingerling potatoes and a salad on the side.

    Chobani Peanut Butter and Jelly yogurt for dessert. It was okay, but I'd rather have regular fruit yogurt. This was the only variety that worked with the sale and coupon, however, so we gave it a try.

    Last night was Crankie’s 60th Birthday so we had grilled steaks, burgers , roasted cauliflower, Bush’s baked beans, macaroni and German potato salads.

    I bought a Birthday cake with strawberry filling at the King Kullen bakery.

    Last night was Subway subs - a veggie for myself and rotisserie chicken for hubby.
    Tonight I picked up cauliflower crusted pizza from Pie 5 for hubby and myself. Their special today was triple bonus points.

    Two nights of take out is unusual for us, but the last two days have been hectic.

    Tonight we went with stir-fry again. We had Sweet and Sour Chicken and a mixed rice medley with it.

    The other night I made meatballs. One recipe came out great and the other one, not so great. D1 and her boyfriend made and Alfredo sauce over some penne and it was delicious.
    Last night I had leftovers the included fish and corn on the cob. D2 hD a goat cheese and beet salad, D1 had pasta leftovers. D3 is at a friends house and probably ate out.

    Tonight I baked a salmon fillet that Crankie bought at Sam’s club. We had waffle fries, green beans and salad as sides.

    It was a hot day....nothing sounded good for dinner....so DH made grilled cheese sandwiches.
    Mine was simply cheddar cheese....his was provolone and tomato grilled cheese. It hit the spot.

    Hot, busy day and like @flowerkitty said, nothing sounded good. My son had gotten pizza so no worries for him. Ended up making hubby a chicken sandwich. I just made a tomato & cucumber salad for myself with a couple of boiled eggs. (I try to keep a bowl of boiled eggs in the fridge for whoever needs a snack, salad, etc.)

    @Jorainna I am glad you mentioned boiled eggs...I think it is time for another batch of egg salad...it is good for breakfast, lunch & dinner...a cold sandwich is so refreshing when it is hot.
    The chickens have only slacked off a little with the hot weather.

    Last night we had veggie burgers on whole wheat buns, corn on the cob and Southwest chopped salad.

    Tonight it was roast beef sliders on whole grain buns, leftover tomato soup and another Southwest chopped salad.

    We've picked up a VERY few tomatoes at the farmers markets to eat fresh, but they are VERY pricey around here, because you pretty much have to have a greenhouse to grow them. We have been getting some fresh tomatoes on markdown at the supermarket, so have been splurging on a few of them and enjoying them on virtually all of our sandwiches and burgers -- as well as a batch of fresh, roasted tomato soup this week.
