    We've got chili going in the Crock-Pot so that will be dinner.

    We've got shredded cheese, green onions and cilantro for toppings.

    Still haven't decided whether to cook up a cornbread mix or simply use wheat saltines along with it. Guess my mood when it is ready will decide.

    BBQ chicken and potato salad -- although we had a tough time getting the chicken. Even though it was on sale, our regular store has decided not to bother making it any longer and we had to hit the sister store. :(

    No wonder we haven't been able to find it the last several months whenever they put it on sale. :confused:

    We had burgers I found in the freezer. Trying to use up meat we already have. Not sure what I will find for today.

    Found sirloin kabobs/stew meat in the freezer. Added golden mushroom soup, onions, and peppers. All in crockpot. Will serve over rice. My DH calls this 'beef teriyaki' a recipe his mom made when he was a kid.

    Last night we had spaghetti. One day last week, Hubby called and asked me to make some room in the big freezer. He had found a great deal on meat, and couldn't pass it up. When I was moving things around, I found a package of plant-based "meatballs" that I forgot I had. I let them simmer in the sauce, and they were really good! I'm adding them to my "keep on hand" list!

    Tonight we're having tuna casserole. It's a lighter version, using cooked mushrooms and onions.

    Orange Chicken and brown rice bowls with steamed veggies. They were DELICIOUS!

    Tonight we'll be having Spicy Garlic Shrimp over rice, with roasted asparagus and mushrooms. It sounds so fancy, but it's so easy to make!

    Breakfast: A whipped cream eclair.
    Lunch: Pizza, followed by apple strudel and a snifter of cognac.
    Dinner: It will be hot dogs and potato chips.

    Clearly, I believe in a well-balanced diet.

    We had a B1G1 milkshake coupon that expired today so we got $1 burgers and $1 fries to go with it for a late lunch.

    Wanted a light dinner so went with a nice salad and fresh grapefruit juice for dinner.

    I have a crock pot of black eyed peas cooking already! Hubby will have pork roast, and I'll have salmon.

    Night before last we had Cedar Lane Organic Enchiladas. I was gifted a free coupon, had a 55 cent coupon for another and they were on mega sale so two meals cost us $1.34 each OOP. They normally retail for $5.39 each.

    We teamed the enchiladas with Fiesta Lime Coleslaw we got on markdown.

    Last night we had a copycat Panera Bread Autumn Squash Soup with a Sweet Kale Salad on the side.

    Picked up some organic whipping cream on markdown the other day, so the soup was a good way to make use of it.

    Lunch of B1G1 shakes with $1 burgers and fries. Neither of us are hungry after that. If I get hungry before bed I'll have a nice tall glass of fresh grapefruit juice.

    I had leftovers and made the Pioneer woman’s Alfredo sauce with fettuccine for d1 & D3. It came out great!

    Had a big lunch out yesterday so just had crackers and cheese for a dinner snack. Tonight is meatloaf and mashed potatoes and green beans.

    Two of Hubby's brothers came over for dinner last night. One of them is married, so his wife and their teenage granddaughter who is staying with them came too.

    Hubby cooked burgers on the grill in the sleet and snow. I cooked roasted potatoes, along with broccoli and cauliflower...and the asparagus, mushroom, shallot dish that always goes over well.

    I made a chicken pot pie for tonight's dinner, thus finally using up the Thanksgiving potatoes. Plus I chopped of a good potato eye and planted it. Was uninspired at Kroger today and wanted a chopped salad kit, but they aren't on sale, picked up some broccoli crowns instead and used half in the potpie and will probably have a stir fry with the rest.
