Honolulu Chicken Casserole

Honolulu Chicken
serves 6

6 chicken breasts
12 oz jar peach or apricot preserves
2/3 c barbeque sauce
2 T soy sauce
1 chopped onion
6 oz can sliced water chestnuts (drained)
6 oz can bamboo shoots (drained)
6 oz can mushrooms (drained)
1 sliced green pepper
1 can mini corncobs (drained)
cooked brown rice

Mix all ingredients except chicken.

Place the chicken breasts in a large casserole dish.

Cover the chicken with the other ingredients.

Cover, and bake in a preheated 350 degree oven for 1 hour.

Serve over brown rice.
