There are 4 of us, but I typically use a 5lb.family pack of chicken things (I remove the bones & skin myself) and double the broth. This is a very easy recipe to adapt depending on what veggies you like or dislike.

Home-Style Chicken and Dumplings

1 large potato, peeled and cut into ½ inch pieces (1½ C.) 2 medium carrots, sliced (1 C.)
14.5 oz. chicken broth
¼ C. all-purpose flour
1 tsp. salt
½ tsp. dried marjoram leaves
¼ tsp. pepper
8 boneless, skinless chicken thighs (2 lbs.)
10 oz. frozen green peas, thawed
1½ C. Bisquick
½ C. milk
Paprika
  • Place potato and carrots in 3½ to 4 qt. slow cooker. Mix broth, flour, salt, marjoram and pepper; pour into slow cooker. Add chicken.
  • Cover and cook on low heat setting 6 to 7 hours or until juice of chicken is no longer pink when centers of thickest pieces are cut.
  • Stir in peas. Cover and cook on high heat setting 15 minutes.
  • Mix Bisquick and milk until Bisquick is moistened. Drop by spoonfuls onto chicken mixture. Sprinkle with paprika. Cover and cook on high heat setting about 20 minutes or until toothpick inserted in center of dumplings comes out clean.
