Fruitcake Bars

1 cup raisins (golden or dark)
1 cup chopped dates
1 cup mixed chopped candied fruit or dried fruits (we prefer a dried berry mix)
¼ cup orange juice or brandy
4 eggs
1 cup sugar
1 tsp vanilla extract
1 tsp grated orange peel
½ tsp salt
¾ cup all purpose flour
1 ½ cup chopped nuts

In small blow, combine raisins, dates, and candied fruit with juice. Stir, cover, and set aside for 24 hours (1/2 hour okay).

Preheat oven to 350-degree F. Grease and flour a 15x10 ½ inch jelly roll type pan. In large mixer bowl with mixer and medium speed, beat eggs until mixed. Add sugar, vanilla, orange peel, and salt; continue beating until combined. Stir in flour, marinated fruit and nuts. Spread evenly in prepared pan. Bake 30-35 minutes. Cool in pan and cut into bars.

To store, place in airtight container at room temperature up to 3 weeks, or wrap well, label, and freeze up to 3 months.
