    Chinese Fried Rice

    2 eggs beaten with 1/4 tsp salt
    5 Tbsp peanut oil (I substitute)
    1/2 cup diced chinese BBQ pork or lean ham
    1/4 c green pea,s fresh or frozen
    1/2 small cooked shrimp (or replace with second 1/2 cup ham or other)
    4 cups cold cooked rice
    1 tsp salt
    2 green onions, finely sliced
    2 Tbsp dark soy sauce (optional)

    Beat eggs with 1/4 tsp salt, set aside. Prepare other ingredients and arrange on big platter so they can be easily used as needed. Heat 1 Tbsp oil in wok and fry eggs, breaking into small pieces with spatula. Remove eggs to a bowl.

    Heat 1 Tbsp. Oil in wok and stire fry pork and peas for one minute. Remove to bowl.

    Heat 1 Tbsp oil in work and stir fry shrimp for one minute. Remove to bowl

    Heat last two Tbsp oil in wok and add rice. Stir-fry until rice is throughly heated. Add salt, green onions, and previously fried ingredients. Add soy sauce to taste. Toss well to mix.


    Can be made in skillet, easy to make substitutions.

    ¼ cup green peas, fresh or frozen
    ½ cup small cooked shrimp (or replace with second ½ cup of lean ham)
    4 cups cold cooked rice
    1 tsp salt
    2 green onions, finely sliced
    2 tbsp dark soy sauce (optional)

    Beat eggs with ¼ teaspoon salt and set aside. Prepare other ingredients and arrange on big platter so they may be easily used as needed. Heat 1 tbsp peanut oil in work and fry eggs, breaking into small pieces with spatula. Remove eggs to a bowl. Heat 1 tbsp oil in wok and stir fry the pork and peas for one minute. Remove to bowl. Heat 1 tbsp oil in wok and stir fry shrimp for 1 minute. Remove to bowl. Heat last 2 tbsp oil in wok and add rice. Stir fry until rice is thoroughly heated. Add salt, green onion, and previously friend ingredients. Add soy sauce. Toss well to mix. Serve immediately.
