Recipes - Tried & True Easy Beef Stew (Oven Cooked)

I was skeptical about this but since I had everything on hand, decided to give it a shot and I'm so glad I did. It was great. I feel sure it would work for the crock pot too.

4 HOUR BEEF STEW
3 lb. beef stew meat (I only used 1 pound)
2 onions, sliced
3 stalks celery, sliced
3 potatoes, peeled and diced
4 carrots, peeled and sliced
2 tsp. salt
2 tbsp. corn starch
1/2 c. tomato soup

Heat oven to 250 degrees. Spread uncooked stew meat in 10 x 15 inch pan. In layers add onion, celery, carrots and potatoes. Mix in salt and corn starch with soup. Pour over mixture. Cover tightly and bake 4 hours at 250 degrees.

No need to layer the veggies, I just dumped them over the meat and spread them out a bit.
I only used 1 onion but it was BIG.
Used 1 small can of tomato soup plus water.
Didn't have corn starch so used flour.
Used more carrots because I had a bunch.
Didn't use plain salt, used my 3 favorite seasonings.

In other words - this recipe is adaptable!

I didn't label this "fast and easy" because, though it IS easy, it takes several hours to cook.

Sounds like a recipe I have - even the can of tomato soup! It is fantastic & so easy! Way to go, 3timesoccermom! My friend made Italian beef sandwiches last night - she put a roast in the crockpot before she left for work - she added Italian seasonings and Italian dressing to it and let it cook on low all day - terrific! The coleslaw was a sweet and sour with cashews and sesame seeds. All great

For us tonight it is leftover Italian Spaghetti from Wed. night. DH bot cukes at Aldis this week and they are extra good so will add those to our salad, plus fresh mushrooms.
