Denver Omelette Pie - great for a brunch!

If you need a super fast, easy dish to bring to a brunch or serve your own family, try this. You'll receive rave reviews!

6 eggs
1/2 tsp thyme
1/2 tsp salt
1/2 tsp basil
1/2 tsp pepper
3 cups frozen shredded hash browns (one bag of "Simply Potatoes" works perfectly for this recipie).
1 cup shredded cheddar cheese (you can also use Swiss or any other cheese you have on hand).
1 cup of diced fully cooked ham
1/2 cup finely chopped onion

In large bowl, beat eggs, thyme, salt, basil, pepper.
Stir in potatoes, cheese, ham & onions.
Pour mixture into a greased pie plate

Bake at 350 degrees for 55-60 minutes
Garnish with tomato slices (optional)

This sounds like a "Farmer's Casserole" which IS very good!

No matter what they call it, it still tastes good. My sister shared this recipie with me several years ago. My DH loves it and friends have raved about it.
Sometimes I substitute the ham with cooked polish sausage just for a change.
I enjoy improvising with recipies.
