Recipes - Tried & True Chocolate Chip Cheesecake

Please use the mini chips or they will not stay suspended in the batter while baking. Trust me - I have tried the regular-sized ones and there is a big difference in the outcome. This is a very easy recipe and it's a real cheesecake.

Chocolate Chip Cheesecake

1 cup graham cracker crumbs
3 tbsp. sugar
3 tbsp. margarine, melted

3 8 oz. pkgs. cream cheese, softened
¾ cup sugar
3 eggs
1 tsp. vanilla
1 cup semi-sweet mini chocolate chips

Combine crumbs, sugar and margarine. Press onto bottom of spring form pan. Combine cream cheese with sugar until well blended. Add eggs, one at a time. Add vanilla and chocolate chips. Bake 10 minutes at 450, reduce heat to 250 and bake 35 minutes more. Loosen sides and cool before removing rim of pan. Chill.

Additional notes - best made 1 or 2 days in advance. Let the eggs and cream cheese come to room temperature before mixing.

For an extra dose of chocolate add a tablespoon or so of cocoa to your graham cracker crumbs when making the crust.

Adding a little cinnamon or a few nuts to the graham crackers when making the crust is also a nice change.
