BRAN Bran muffins

3 cups unprocessed bran
1 cup boiling water
1 stick margarine
½ cup honey
½ c molasses
2 eggs
1 tsp vanilla
2 cups buttermilk
2 ¼ cups flour
1 ½ tsp baking soda
1 tsp salt

In main bowl, combine 1 cup bran and boiling water. Stir well and allow to stand 5 minutes. Meanwhile, cream margarine. Add honey and molasses slowly, beating until creamy. Beat in eggs, then add vanilla and buttermilk. Stir well, and add to bran mixture.

In third bowl, combine dry ingredients: flour, soda, salt, and remaining 2 cups bran. Add dry ingredients to set bran mixture, stirring only until flour is moistened.

Spoon into greased muffin cups. Bake at 375-degrees F for 20-25 minutes.
