Bisquick Muffins



Bisquick Muffins

2 tbsp sugar
2 cup bisquick
1 egg
¾ cup milk

Heat oven to 400-degrees. Blend ingredients, then beat vigorously 30 seconds. Bake 15 minutes.

Fruit: Add 1 cup berries, dates, or figs

Orange: Add ½ cup orange juice in place of ½ cup of milk. Sprinkle muffins with sugar before baking.

Pineapple: Add medium can crushed pineapple, drained. Replace ½ cup milk with ½ cup drained juice. Add 3 oz cream cheese

Oatmeal: Use 3 tbsp sugar, 2 cups Bisquick, 1 egg, ¾ cup milk, 1 cup oatmeal, 2 tbsp shortening cut in, and ½ cup raisins.


I had to bump this up as I tried it out and tweaked it slightly since I was looking for a quick muffin. Turned out great! I made Choc Chip muffins out of them. Hope to try blueberries next!

2c Bisquick

1 tsp vanilla
1 tsp baking soda

add about 1/3 bag choc chips

ended up baking about 18 min at 350

Great way to use up some of that Bisquick. I actually made double the 2nd time and froze half!
