I posted this under vegetables, because there isn't a breakfast heading. But honestly, you could eat this any time...and you might even want to try it for a refreshing dessert in the summer! It's super quick to make!
Avocado Breakfast Pudding
Serves 1 or 2
1 ripe avocado
1/2 cup milk (*this is what the recipe calls for, but it makes it very runny! Just a splash will do!)
1 tablespoon honey
2-3 tablespoons granola or crushed almonds
Blend avocado, milk, and honey in a blender (or food processor) until smooth. Garnish with granola or almonds. You can also chill for about an hour for a refreshing coolness.
*You can use any type of milk...regular, soy, almond, etc.
