Recipes - Tried & True Aunt Honey's Mocha Lacy Cookies

I thought this was my grandma's recipe but it is from my Great Aunt Honey. Here it is:

2/3 C Butter, softened, or Margarine
1 C Confectioners Sugar, sifted
1/8 tsp Salt
2 tsp Instant Coffee Granules
1/4 tsp Almond Extract (or Vanilla if you prefer)
2 C oats (quick or old-fashioned)
Semi-Sweet Chocolate Chips

Beat butter and sugar until creamy. Add salt, coffee, and extract and beat well. Stir in dry oats, and chill dough until stiff (2 to 3 hours).

Break off pieces of dough, and roll into small balls. Place on foil-lined cookie sheet - far apart - and press 3 chocolate chips into surface. Bake at 425 about 5 minutes until brown and lacy. Remove from pan after 2 minutes. Watch carefully while baking, as they burn easily.

**If you don't like mocha, omit the coffee.
