I was cleaning out the fridge today and found a head of lettuce that I need to use pronto. However we have had salad as a side dish several times this week and, frankly I was sick of salad. My guinea pig Buttercup gave a squeal when I opened the produce drawer…I guess she knows that means time for a treat. So I peeled off a leaf of lettuce for her and went off to to see what recipes I could make with lettuce besides salad.
So what’s for dinner tonight? Chinese Turkey Lettuce Wraps

This recipe looks interesting and luckily I already had all the ingredients except the ginger root. So I put a call in to my husband to pick up some fresh ginger on his way home from work.
Ground turkey is great as it is low fat and actually I can find it on sale with coupons (look for Jennie-O or Honeysuckle White coupons from time to time) or, I canif I find a good sale on turkey breasts. I will be omitting the mushrooms simply because 3 out of 6 in our family do not like them. I love them but the husband and two of the kids refuse to eat any dish that has mushrooms in it. I bet I could sneak them in if I had too (shh…) but I don’t have any on hand and asking the hubby to pick up mushrooms would raise the red flag for sure.
- 2 teaspoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- ¼ cup hoisin sauce, found in the Asian food section of the grocery store
- 2 teaspoons olive oil
- 1 pound 93% lean ground turkey breast
- 2 cups finely chopped button mushrooms
- ½ teaspoon salt
- 1 1/2 teaspoons chili powder
- 3 cloves garlic, minced
- 1” knob of fresh gingerroot, finely minced
- 3 large carrots, grated (about 1 ½ to 2 cups)
- 6 scallions (green onions), finely chopped (about 1 ½ cups)
- 1 (8-ounce) can water chestnuts, drained and finely chopped
- 1 head iceberg lettuce
