Asparagus Wrapped In Bacon
Recently a local store here had asparagus on sale for $1.99 a lb. plus there was an in-ad coupon for $1.00 off making it only $1.00 per lb. I couldn’t pass it up!
This is a really simple way to cook asparagus, and while I know that bacon is not healthy…it is sooooo good. I don’t usually eat my asparagus this way (I prefer it stir fried) but for a special meal it is a lovely treat. My kids were all over this!
There are just two ingredients…
Nothing else needed.
First step is to pre-heat your oven to 375 degrees F.
Then take your asparagus and wash and dry it and trim off any dried ends that it may have.
Take a strip of bacon and slice it down the middle lengthwise.
Then you simply twirl one of the slices of bacon around a spear of asparagus.
Then place on a lined rimmed cookie sheet (I used my Silpat non-stick cooking mat, but you could use foil or parchment paper – it just aids in clean up).
(My kids said they looked like bacon and asparagus candy canes!
Then bake for 30-45 minutes until the bacon is as crisp as you like it.
Then serve as a side dish to your favorite meal. We had some homemade chicken strips with ours – YUM!
