Default Freezing Fruit

Choose firm, sound, uniformly sun ripened fruit. [Pears and bananas do not freeze well]. It is not essential to use sugar but it is often preferable. To sugar fruit, place it in a shallow tray. Just before you pack, sift the sugar over it until evenly coated. Don't let the mixture stand or the sugar will draw the fruits' juices. When packing, allow some room for expansion on freezing.

No sugar is required for these fruits.


Apples and plums should be immersed briefly in a solution of 3 Tbsp lemon juice or 1/4 tsp. Ascorbic acid to 1 qt water and drained to prevent browning. Blueberries should be steam blanched 30 sec to a minute to keep skins tender.

I don't know about pears, but bananas do freeze well. It just depends on what you plan on doing with them. Just put the entire unpeeled bananas in the freezer. When reading to use (for baking, like banana bread), then remove from freezer, let defrost a bit, snip off end of banana & squeeze into batter.

Another way to freeze bananas is for treats. Take a banana, peel, put a stick in it, dip in chocolate, roll in nuts if you like & freeze. We used to make these at DQ all the time & they sold very well.

There used to be a "kit" in the banana section of stores, melt chocolate and dip frozen bananas, I think, then refreeze ? Chocolate covered frozen bananas are EXCELLENT, and fairly nutritious, too!

I can't remember if we froze them first & then dipped & refroze. I only did them a couple times. I was the Buster Bar making girl:=)

With chocolate bananas they are great frozen! The kids love them. U can get the kit for chocolate or peanut butter by the bananas and u freeze the bananas first for about an hour or two, then take them out and dip them in the chocolate and put them back in the freezer for about 30min. then they are ready to enjoy!
