Savory Lemon Vegetables
6 slices bacon, cooked and crumbled, reserving ¼ drippings (optional)
1 pound carrots, pared and sliced
1 medium head cauliflower, core removed
1 cup finely chopped onion
½ cup Lemon Juice
½ cup water
4 tsp sugar
1 tsp salt
1 tsp thyme leaves
chopped parsley (optional)
In large saucepan, cook carrots and cauliflower in small amount of water until tender. Meanwhile, in medium skillet, cook onion in reserved drippings or in a small amount of oil. Add lemon juice, ½ cup water, sugar, salt and thyme; bring to a boil. Drain vegetables; arrange on serving dish. Pour warm sauce over vegetables. Garnish with bacon and parsley.
MICROWAVE OPTION: Cook bacon, reserving drippings if desired. On large covered microwaveable casserole dish arrange carrots and cauliflower. Cook on HIGH 14 – 16 minutes. In 1-quart size bowl, cook reserved bacon drippings or small amount of oil and onion on HIGH 1 minute. Add lemon juice, water, sugar, salt, and thyme. Cook on HIGH 5 ½ - 6 minutes or until sauce boils. Drain vegetables, arrange on a serving platter with a rim, pour warm sauce over vegetables. Garnish with bacon and parsley.
