Creamed Spinach

1 10-ounce package frozen chopped spinach
2 Tbsp lemon juice
1/3 cup finally chopped onion
3 Tbsp butter or margarine
2 Tbsp flour
¼ tsp salt
1/8 tsp ground nutmeg
dash pepper
¾ cup beef broth or milk
½ cup dairy sour cream
2 Tbsp snipped parsley

Cook spinach according to package directions, except used lemon juice in place of water. Drain well.

In a saucepan cook the onion in butter/margarine until tender but not brown. Stir in flour, salt, nutmeg and pepper. Add the beef broth or milk all at once. Cook and stir over medium heat until mixture is thickened and bubbly. Book and stir 1 minute more. Stir in the drained spinach, sour cream, and parsley. Heat through but do not boil.
