    CHEF Wanted: Banana Recipes!

    I need some banana recipes. The dr says I need more potassium and to eat a banana every day - I don't like to eat bananas but I don't mind the flavor (if that makes sense)!

    So, if you can help me out with some banana recipes, I would appreciate it!

    Like you I have to have the extra potassium. Unfortunately when any veg. or fruit is cooked or processed it looses those things you are trying to obtain from it when eaten as is.

    If you like dried apricots try those as they are very high in potassium. I eat 1 -2 pieces ( depending on the size ) daily & it works like a charm.

    I've got some recipes, but I'll have to dig them up. One is for Banana Choc Chip mini muffins. MMMM!!!

    But, in the meantime, check out this chart. You'll see that there are lots of ways to get potasium in the foods you eat:

    How about a banana drink? Just add a banana, milk and cinnamon to taste. Some people use strawberries also. Put it in the blender and turn it on until blend. MM good. My mom used to make this for me.

    OK, here's the recipe I have. It's actually a Weight Watcher's recipe. But I've made them for lots of people...and nobody knew!!

    Banana Chocolate Chip Muffins

    1 cup low fat vanilla yogurt
    1/2 cup skim milk
    1/2 cup uncooked quick oats
    1/2 teaspoon. vanilla
    1 egg, beaten
    1 large banana, mashed
    1/2 cup brown sugar
    1 1/4 cup flour
    1/2 teaspoon baking soda
    2 teaspoon baking powder
    1/2 tteaspoon salt
    1/2 cup mini chocolate chips Preheat oven to 375. Combine yogurt, milk, oats, vanilla, egg and banana.
    Set aside for 5 minutes to soften. In separate bowl, stir together brown sugar,
    flour, baking soda, baking powder and salt. Stir flour mixture into yogurt mixture to moisten.
    Add chips. Do not beat, will be thick. Spoon by heaping teaspoons into mini-muffin tins.
    Bake until golden brown, about 15-18 minutes.
    Makes 36 mini-muffins at 1 point each.
