    CHEF How do you cook your asparagus?

    I’ve never fixed fresh asparagus before even though I love it, DH doesn’t eat it so I’ve always considered it too expensive just for me. But it was on sale so I treated myself. I’m sure I’d like it simply steamed with a little butter but I don’t know when I’ll buy it again so I want a WOW way to cook.

    Well this was wow enough for us to eat 3 pounds of it today.

    Just snap off the hard end and sautee with a dab of butter and olive oil. We added mushrooms too and garlic salt (had no fresh garlic). My oldest also likes to add a little bit of soy sauce.

    We've also roasted it in the oven after tossing it with olive oil, salt and pepper.

    I cut off the "woody ends", toss with a little olive oil, garlic, salt, and pepper, lay out in a single layer on a cookie sheet and roast in the oven at 400. I just watch it until it is done...goes pretty quick.

    I steam it and add lemon juice.

    You could use vegetable oil or canola oil if that is all you have.

    throw olive oil in a gallon ziploc bag with any seasoning you like. We use parmasan cheese, pepper and smidge of seasoning salt. mix it up in the bag then toss the asparagus in it. turn every 15 min and throw it on the barbie! Soooooo good!

    If you're going to steam it you can just use butter as that shouldn't make the butter burn. You might be able to sautee if your stalks are pretty thin and you cook it on low if you watch carefully. You do part olive oil because it allows a higher cooking temp and part butter for the flavor of the butter but many people love the flavor of olive oil alone.

    Ya gotta get a little bottle of olive oil! On coupons.com there have been plenty of coupons for Felipo Berio (sp???) brand lately - $1 off.

    Let us know what you did and how you liked it!

    Kroger is where we got ours today for $1.99/lb. We bought 3 pounds the first trip to the store. Fixed 1 pound in mid-afternoon for a snack, we all gobbled it down, then fixed the 2nd and the 3rd!! Then we went back and bought 6 more pounds!!

    I do it a few different ways, steamed with hollandaise sauce, wrap in foil with some butter/olive oil, garlic, and lemon juice, you can put this on the grill or in the oven. Always cut off the bottom of the stalk. And personally, I like mine pencil thin. I love asparagus!

    Because I had several other things cooking for supper I ended up simply steming them in the microwave.

    I washed them, broke off the ends, stacked them in an oval casserole dish, added a small amount of water, covered with plastic wrap, vented a corner, cooked for 5 minutes, peeled back the plastic, dabbed butter in several places and drizzled a little lemon juice over that, replaced the plastic, microwaved another minute, removed plastic, and gently shuffled them to coat them all well with the lemon butter.

    That's it, yes they were good and I liked them. I knew I would because I like canned asparagus and fresh is aways better.
