These were super yummy. I used whole eggs, figured it would be alright since we cut out the whole frying thing :)
Oven-Baked Onion Rings
1/4 cup + 2 TBSP all-purpose flour
1/2 tsp salt
1/8 tsp cayenne pepper
1 large Spanish onion, cut into 1/4 inch slices
3 egg whites, lightly beaten
3/4 cup plain dried bread crumbs
Preheat oven to 400 degrees F. Spray a nonstick baking sheet with nonstick spray. On a sheet of wax paper, combine the flour, salt, and cayenne.
Separate the onion slices in rings, but keep them in groups of two, one ring inside another. Dredge the rings in the seasoned flour, dip in the egg whites, and then coat in the bread crumbs; place on the baking sheet.
Bake on the top oven rack until browned, about 10 minutes. Turn the onion rings over and bake until browned, 5-10 minutes.
Makes 6 servings of about 6 rings each.

Bummer foggier - I guess you have too much "love" from me so I couldn't rep you for that recipe but it looks good. I am def trying that soon.
So is it anything like the old fried types?

The onions don't get mushy like fried ones. They are crispy/crunchy on the outside. The onions cook and are raw crisp, but still have a crisp/cooked texture to them.
