    Default Homemade Veggie Burgers

    I am on a veggie kick and decided against eating meat yesterday for dinner. While Dave chowed down on a hamburger stuffed with cheese, I decided to make my own veggie burgers. I have to say, they turned out rather tasty.

    1 (15 ounce) can kidney beans, drained, and rinsed (use the no salt added can)
    1 (15 ounce) can chick-peas, drained, and rinsed (use the no salt added can)
    1/2 cup rolled oat
    1/2 cup mushroom, finely chopped
    1/4 cup onion, finely chopped
    1 carrot, shredded
    1 clove garlic, minced
    2 tablespoons tomato paste or ketchup
    1/2 teaspoon lite salt
    pepper, to taste

    Throw all ingredients in food processor (or blender, if you don’t have one). Pulse (or blend) until coarsely chopped. Chill mixture, then shape into four (4) 1/2-inch thick patties.
    Now you can wrap and freeze them for later. To cook, thaw patties in microwave, then broil 4-6 inches from heat for 10 to 15 minutes (or until warm in the middle). You can do this in your broiler or on the grill. Serve like you do your favorite meat patties!

    I am beyond excited about trying this out. DH laughs his head off whenever I pull out a boca burger... I do happen to be a huge meat eater lol! I just like boca burgers, don't know why!

    So wow - I am really amazed by this recipe and super excited that it doesn't have like tofu or something in it. I don't care for that stuff much, and it wouldn't be cost effective for me to buy it for this dish anyway.

    Wow you have great, and wonderfully interesting recipe ideas! I would rep ya again, but it seems I have recently lol!!!
